Kami at the pumpkin farm

Kami went with her Daisy troop to the pumpkin farm in Woodstock, IL. She had so much fun on the hay ride and and is so proud of that pumpkin! She is always so happy...we love her!! She loves being in Girl Scouts and can't wait for the cookie sales to start! Kami loves the uniform and the patches, but most of all she loves socializing and hanging out with her friends!! Next Friday she will be going to "High School Musical 3" at the theatre with many of the girls from her troop..they can hardly wait!!!

Favorite Family Recipe

Chicken Pot Pie

Pastry: 1 cup flour, 1/2 tsp. salt and 1/3 c soft butter
Mix all the above together with a fork, cutting in the
butter until mixture resembles coarse crumbs.
Sprinkle with water and toss with fork until moist.
Press into a ball and then roll out.

Chicken Mixture: 1 carrot, sliced 2 potatoes, diced
Cook these until soft.
You need 2 cups of chicken...cooked and diced
You will also need 1/2 cup frozen peas

While the above ingredients are cooking, you can make the
following sauce.
1/4 cup butter 1/4 cup flour 1 c chicken broth
1 cup milk 1 tsp. thyme 1 tsp. sage
1/2 tsp. salt 1/8 tsp. pepper

Melt butter in medium or large saucepan. Add flour and cook over medium heat...about 1 min, stirring constantly. Add broth, milk and seasonings slowly and bring to a boil. Cook, stirring until thickened.

Stir in peas, chicken, carrot and potatoes. Pour into a 10" pie pan. Lay pastry on top, brush lightly with milk.

Bake in 450 degree over for about 20 minutes. Pastry should be golden brown in color.

Pumpkin Bran Muffins

2 c all-bran cereal 1 tsp gound cloves
1 1/2 cup buttermilk 1/2 tsp salt
1 can pumpkin 1/2 tsp nutmeg
1/2 c oil 1/4 t ground allspice
2 tbsp orange juice
2 eggs
2 1/2 c whole wheat flour
1 1/2 c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Mix cereal and buttermilk and let stand 5 min. Add pumpkin, oil, orange juice and eggs, blend well. Mix flour, 1 1/2 c sugar baking powder and baking soda, spices and salt; mix well.
**this batter can be baked immediately or stored in a tightly covered container in fridge for up to 2 weeks.
Oven temp: 400 degrees
Grease muffin cups or line with baking cups. Fill cups 3/4 full of mix. Sprinkle each with a little brown sugar Bake at 400 for about 15-18 min.
