SCHOOL PICTURES

I know I am a biased, but aren't they just adorable!! We thought that their school pictures turned out so cute...they are definitely more photogenic than I!! Sara had her 2 year old picture done, but she wasn't very cooperative, so we have to go back for a retake..oh well! We will stick up her picture as soon as we get it. Brittany and Kami are both loving their teachers and school so much! It is so nice that they aren't dragging their feet in the morning!! Kami would go all weekend..(at least for right now!! How long can this last??) Sara and I are trying to take walks in the morning after the girls leave. She likes going in her wagon and I enjoy having the one on one time together!! She was chasing a butterfly the other day down the sidewalk...the cutest thing ever!

Favorite Family Recipe

Chicken Pot Pie

Pastry: 1 cup flour, 1/2 tsp. salt and 1/3 c soft butter
Mix all the above together with a fork, cutting in the
butter until mixture resembles coarse crumbs.
Sprinkle with water and toss with fork until moist.
Press into a ball and then roll out.

Chicken Mixture: 1 carrot, sliced 2 potatoes, diced
Cook these until soft.
You need 2 cups of chicken...cooked and diced
You will also need 1/2 cup frozen peas

While the above ingredients are cooking, you can make the
following sauce.
1/4 cup butter 1/4 cup flour 1 c chicken broth
1 cup milk 1 tsp. thyme 1 tsp. sage
1/2 tsp. salt 1/8 tsp. pepper

Melt butter in medium or large saucepan. Add flour and cook over medium heat...about 1 min, stirring constantly. Add broth, milk and seasonings slowly and bring to a boil. Cook, stirring until thickened.

Stir in peas, chicken, carrot and potatoes. Pour into a 10" pie pan. Lay pastry on top, brush lightly with milk.

Bake in 450 degree over for about 20 minutes. Pastry should be golden brown in color.

Pumpkin Bran Muffins

2 c all-bran cereal 1 tsp gound cloves
1 1/2 cup buttermilk 1/2 tsp salt
1 can pumpkin 1/2 tsp nutmeg
1/2 c oil 1/4 t ground allspice
2 tbsp orange juice
2 eggs
2 1/2 c whole wheat flour
1 1/2 c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Mix cereal and buttermilk and let stand 5 min. Add pumpkin, oil, orange juice and eggs, blend well. Mix flour, 1 1/2 c sugar baking powder and baking soda, spices and salt; mix well.
**this batter can be baked immediately or stored in a tightly covered container in fridge for up to 2 weeks.
Oven temp: 400 degrees
Grease muffin cups or line with baking cups. Fill cups 3/4 full of mix. Sprinkle each with a little brown sugar Bake at 400 for about 15-18 min.
