Pastry: 1 cup flour, 1/2 tsp. salt and 1/3 c soft butter Mix all the above together with a fork, cutting in the butter until mixture resembles coarse crumbs. Sprinkle with water and toss with fork until moist. Press into a ball and then roll out.
Chicken Mixture: 1 carrot, sliced 2 potatoes, diced Cook these until soft. You need 2 cups of chicken...cooked and diced You will also need 1/2 cup frozen peas
While the above ingredients are cooking, you can make the following sauce. 1/4 cup butter 1/4 cup flour 1 c chicken broth 1 cup milk 1 tsp. thyme 1 tsp. sage 1/2 tsp. salt 1/8 tsp. pepper
Melt butter in medium or large saucepan. Add flour and cook over medium heat...about 1 min, stirring constantly. Add broth, milk and seasonings slowly and bring to a boil. Cook, stirring until thickened.
Stir in peas, chicken, carrot and potatoes. Pour into a 10" pie pan. Lay pastry on top, brush lightly with milk.
Bake in 450 degree over for about 20 minutes. Pastry should be golden brown in color.
Pumpkin Bran Muffins
2 c all-bran cereal 1 tsp gound cloves 1 1/2 cup buttermilk 1/2 tsp salt 1 can pumpkin 1/2 tsp nutmeg 1/2 c oil 1/4 t ground allspice 2 tbsp orange juice 2 eggs 2 1/2 c whole wheat flour 1 1/2 c sugar 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon
Mix cereal and buttermilk and let stand 5 min. Add pumpkin, oil, orange juice and eggs, blend well. Mix flour, 1 1/2 c sugar baking powder and baking soda, spices and salt; mix well. **this batter can be baked immediately or stored in a tightly covered container in fridge for up to 2 weeks. Oven temp: 400 degrees Grease muffin cups or line with baking cups. Fill cups 3/4 full of mix. Sprinkle each with a little brown sugar Bake at 400 for about 15-18 min.
